Bin 707 Foodbar makes NY Times’ list of 50 best restaurants in the U.S.

Bin 707 Foodbar at 400 Main Street in Grand Junction made the New York Times list of 50 best restaurants in the United States.

The Times article listing the nation’s the 50 top restaurants came out today, September, 9, 2025.

Bin 707’s executive chef/owner is Josh Niernberg, who is responsible for the creative and unique menus at Bin. Niernberg also owns TacoParty at 126 S. 5th Street.

The restaurant first opened in Grand Junction in 2009. It describes its food as seasonal Colorado Cuisine. Niernberg has also had multiple James Beard nominations, one of the highest honors in the culinary world. He is also a 2025, 2023 & 2022 James Beard

Outstanding Chef Semifinalist and a 2020 James Beard Best Chef Mountain Region Semifinalist. The service at Bin is so impeccable that on a recent visit the waiter wiped a tiny gravy drip off the table in between courses — a silly little detail that totally impressed and made all the difference.

To generate their list of best restaurants, 14 New York Times reporters and editors took 76 flights to cities and town throughout the country and ate more than 200 meals in 33 states. They showed up at restaurants unannounced or used regular reservation-booking tools like apps, paid for all their own food and didn’t accept any freebies.  The article heaped lavish praise on Bin’s “playful, even risky” flavor combinations and described it as “just a magnetic restaurant, with the most stylish dining room this side of the Rockies, or at least on the Western Slope.”

  1. The owner was against automatic increases in the minimum wage several years ago. He made dire warnings and said he would have to fire people. The measure passed and he opened a second restaurant despite his dire warnings. He is anti labor.
